Venison steak and Pumpkin Puree.

Venison steak and Pumpkin Puree. With a side of wild rice and a red wine sauce.

Ingredients for 1 personne:

  1. 1 venison steak

  2. 80g of wild rice

For the puree:

  1. 1/3 of carrot

  2. 1/4 of potato

  3. curry

  4. nutmeg

  5. salt, pepper

  6. 1/4 of pumpkin

  7. 8.5g of butter

  8. 3.5cl of cream (15% fat)

For the sauce:

  1. Salt, pepper

  2. 1/4 bottle of red wine

  3. 4cl of veal stock

  4. 15g of shallots

  5. 1/4 dab of margarine

Steps for the wild rice:

  1. Rinse the rice under clear water

  2. In a saucepan pour the rice and the equivalent of 3 volumes of rice in water

  3. Bring to the boil then reduce the heat and cover. Leave to cook for 50 minutes
